Lemon Curd

Serves Makes 1 1/2 cups


  • 3/4 cup sugar
  • 2 Henergy Cage-Free eggs plus 2 egg yolks
  • 1/2 cup lemon juice and finely grated rind of 2 lemons
  • 100g unsalted butter, chopped into small pieces


  1. Place the sugar and egg yolks in a small saucepan, whisk to combine and then add the lemon juice, rind and butter.
  2. Cook over a gentle heat, stirring constantly, until the mixture thickens and starts to bubble. Remove from the heat.
  3. Pour mixture into a hot sterilised jar, cover and refrigerate
