Serves Makes 1 1/2 cups
- 3/4 cup sugar
- 2 Henergy Cage-Free eggs plus 2 egg yolks
- 1/2 cup lemon juice and finely grated rind of 2 lemons
- 100g unsalted butter, chopped into small pieces
- Place the sugar and egg yolks in a small saucepan, whisk to combine and then add the lemon juice, rind and butter.
- Cook over a gentle heat, stirring constantly, until the mixture thickens and starts to bubble. Remove from the heat.
- Pour mixture into a hot sterilised jar, cover and refrigerate
