Caramel Chocolate Cookies

Serves Makes 30


  • 3/4 cup white sugar
  • 2 tablespoons water
  • 250g butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 Henergy Cage Free Egg
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 cup milk chocolate chunks
  • 1 teaspoon sea salt


  1. Place the sugar and water in a small saucepan over a gentle heat.
  2. Stirring gently at times with a metal spoon, allow the mixture to come to the boil.
  3. Boil without stirring until the syrup changes colour to golden and then to a rich amber.
  4. Quickly pour the syrup into a baking paper lined tray and set aside to cool.
  5. Preheat the oven to 180 C.
  6. Beat the butter and sugars until pale and creamy.
  7. Add the egg and mix well.
  8. Mix in the flour and baking soda.
  9. Smash the toffee into small pieces and add to the mixture along with the chocolate.
  10. Place spoonfuls on baking paper lined trays.
  11. Sprinkle each biscuit with a little sea salt
  12. Bake for 15-20 minutes until golden.
  13. Cool on a wire rack and store in an airtight container.
